Cornbread Muffins
Ingredients

  • 1 Tablespoon Sugar
  • 1 Cup Flour
  • 1 1/3 Cup cornmeal
  • 1 teaspoon salt
  • 1 Tablespoon Baking Powder
  • 2 Eggs
  • 1 Cup Milk
  • 4 Tablespoons melted butter

Directions

Preheat oven to 400 F. Grease or spray 8 inch square pan or muffin pan (12 cups).

In large bowl, combine cornmeal, flour, sugar, salt, and baking powder. Mix well.

In seperate bowl, combine eggs, milk, and melted butter, mix well and add to dry ingredients. Stir together, but do NOT OVERSTIR, batter should be somewhat lumpy. (Break up any large lumps of batter though)

Fill each muffin cup 2/3 full, or pour batter into 8 inch pan.

Cook at 400 f. for 20 minutes (Muffins)
Cook at 400 f. for 25 - 30 minutes (Pan)

A toothpick, inserted into muffins or cake, will come out clean when done.

Variations:

Add 1/2 Cup crumbled bacon (cooked) to batter (Ymm!)
or-
Add 1/2 Cup ground sausage (cooked) to batter (Also YUMM!)
